NEW FOR SPRING 2012.
February 10th or May 11th:
Introduction to Cheese Making - this one day course (10am - 4pm) gives you an insight into cheese making and is delivered by
one of the Cotswolds finest cheese makers Melissa Ravenhill. This hands on day includes butter making, soft cheese and fresh
cheese production. £175 including equipment, materials and refreshments.

February 14th, 15th and 16th:
The Cotswold Chef Junior Chefs Programme (Stage 2) is a 3 day course (10:30am - 3:30pm)that builds on the great skills
developed during Stage 1 delivered in an industrial catering setting in full chefs whites. The course is for young people
aged 11-16 years old with a real enthusiasm for cooking and possibly even a career in hospitality and catering. This course
will inspire and motivate and be packed with culinary experiences and includes all meals. A perfect course during the school holidays.
BOOKING EARLY IS ESSENTIAL. This course costs £135 per person with a 5% discount for siblings.

Feb 23rd, March 1st, 8th and 15th:
Cooking for Beginners - this evening course (6pm - 9pm) delivered for 4 weeks will provide you with the real basic principles of cooking.
You will be able to go away confident on how to cook and look after yourself with a passport of cooking skills and recipes that are
healthy , tasty and affordable. £270 for the full course.

Mar 3rd:
Meat Masterclass - this full day course (10:30am - 4:30pm) will teach you everything from basic butchery, meat preperation and lots
of cooking of a mixture of prime cuts, slow cooked cuts and other meat products. This course costs £155 per person.

Mar 29th or May 24th:
Chocolate Heaven - these one day courses (10am - 4pm) are exactly what it says on the lid! A true gastronmic and professional
journey of chocoalte delivered by the wonderful experts of www.lickthespoon.co.uk.
The full details will go live on the website in due course but this is one for every chef and cook wishing to enhance their love,
skills and knowledge for chocolate. £150 per person with 10% Early bird price (if booked before Feb 1st 2012).

May 19th:
Fish Masterclass - this full day course (10:30am - 4:30pm) will engage you in the art and craft of fish preperation. Using the
great fish supplied by www.new-wave.co.uk you will
learn how to understand the princples of cooking with different types of fish from boning and filleting to the cooking of natures most
nutritious and healthy products. £135 per person.

June 7th and 8th:
The Cotswold Chef Junior Chefs Programme (Stage 2 PLUS) - a whole new level of young peoples cooking. This two day course
(10:30am - 3:30pm) is a must do for all those who have taken part in Stage 1 and 2 of the programme. It is the finishing touches to a
young persons gastronmic journey that pushes the boundaries of their masterchefskills using the finest of products. This course costs
£150 per person including all meals and lots of fantastic tastings and eats! BOOKING EARLY IS ESSENTIAL.
